Friendsgiving is a fun way to celebrate Thanksgiving dinner with friends on any date other than the last Thursday of the month of November. The Ellen K Morning Show gathered some of their favorite recipes to bring along and some games that pair well with the fun! Ellen K's Earthy Casserole
- 2-lbs of Sweet Potatoes, peeled and cut into 1-inch pieces
- 1-lb Yukon gold potatoes, peeled and cut into 1-inch pieces
- 4-oz (1-stick) of unsalted butter
- 2-1/2 tbsp chopped sage
- 1-1/2 cups of whole milk (warmed)
- Salt & pepper to taste
- 1-cup fresh breadcrumbs
Boil potatoes together until soft. Drain water from potatoes once fork pierces through potato (about 10-minutes.) Preheat over to 375-degrees. Melt 1-stick of butter in a small saucepan over medium heat, swirl until golden brown for about 5-minutes. Stir butter, milk & potatoes, season with salt and pepper. Transfer to a casserole dish, cover with foil, top it with breadcrumbs and slivers of sage. Bake for 30-40 minutes, until breadcrumbs are golden brown. Voila!
